After completing all Shadow Link challenges, you are given the opportunity to fight Gramps AKA Old Link from ALTTP.

This fight was done on Hero Mode, although not required.

My method for completing the challenges required waiting for Shadow Link signs to generate and then fight rather than organic StreetPass.
To do this, leave your 3DS with ALBW on for 5 hours in-game time to generate a Shadow Link sign. Rinse and repeat until you get the desired amount of signs.
