The game does try to prevent you from being able to switch the difficulty mid way through the game and still obtain the trophy/achievement called A Man Chooses for beating the game on survivor difficulty. However, if you change the difficulty at the right moment during the final boss fight it is possible to get the achievement/trophy, even if you play on easy for the entire game.

I used the PS4 capture tool to record this which means you do not see the trophy pop, but it definitely did unlock for me during this play through. Just before the final cut scene starts, pause and change the difficulty and you will get the trophy. Make sure you save just before the fight ends so you can try again if you screw up.
