A Pokemon's Nature aka "Fighting Style" can be changed at will wherever you are. The same is true for EVs and IVs.

But for the sake of immersion and seamlessly explaining the concept to new players, there's a Pokemon Store called "Essential Vitamins" early on. It sells Vitamins, items that increase EVs. And a new Vitamin called Ex-Stats, which resets all EVs to 0.

Good for correcting mistakes and trying out new builds without needing to grind a new Pokemon/reset the game/cheat and hack/use glitches/use berries that require grinding and waiting aka berry farming and guides to get and understand the use of.

Nature Names hint at what they do better than nonsense like "sassy". If you turn your Timid Charizard Bold with a "mint", that's not a mint. That's medication. It's bad enough that Pokemon has you steal wild animals from their natural habitat, store them as data inside mind control balls, and only let them out for fighting 99% of the time. Pokemon happiness is optional and typically unnecessary. Feeding and washing your Pokemon and playing with them is a gimmick just like Contests. Many Pokemon have humanlike or higher intelligence and once married humans and ate at the same table, some ghosts are canonically dead people, but consider the possibility of a Pokeball that works on humans to consider just how messed up this setting was written to be despite the constant "WE LOVE OUR FRIENDS! BONDS! POWER OF FRIENDSHIP! POKEMON LOVE THEIR SERVITUDE!" talk. I'm surprised it took until Gen 6/7 (depending on how you look at it) to think of a gimmick where the Trainer contributes anything to a Pokemon's power like the use of a powerup. Trainers should really be using Spell Cards like in Yugioh.

Yugi Yugioh and his "Heart of The Cards" talk shows more respect for the souls of playing cards than the average Pokemon player shows for the mons he catches en masse and boxes or ignores outright or uses for target practice on the way to the next Gym Leader. Growing emotionally attached to your Pokemon isn't encouraged by the mechanics, but by optional challenges like the Nuzlocke. Gameplay has a big influence on your attitude towards the characters. And by designing the game to be an unbalanced mess, you get memes about how absurdly homogenous everyone's Sinnoh team was. If you want to use your favourite, and he's not your favourite because of his power, and you want to use him against other humans(not even top percentage professionals, just hobbyists with a better understanding of Pokemon than Game Freak) and win, you'd better find a segregated safe space metagame in which he's safe from everything that can devour him for breakfast or do his job better.

Gym Leaders are the perfect place to show players interesting new strategies and show use cases of the mechanics, but... Well, Game Freak is full of Game Freak employees so aside from Levitate Terra Electric Mismagius and the rare held Sitrus/Oran Berry or Quick Claw, you won't see that in canon. But this is a fangame made by someone who cares, so you can expect to see your foes use Held Items, Weathers, Terrains, Berries, Abilities, even team synergies. Trainers are smart now, with IQs above the average twitter user.

The EV store also contains an IV Clinic vet who'll let you modify the IVs of your mon and explain what they are. They're a redundant mechanic as 99.9% of players want maxed stats for their mon, but they're good for Trick Room and even rarer use cases like when you want Beast Boost or something like it to target a specific stat.

I also sped up Berry Growth, ensured the player gets the interesting Berries early on, eliminated redundancies, and put effort into designing this game.
