Whether you call it arroz con pollo on the griddle, Mexican chicken and rice, or ACP, this easy Blackstone griddle Mexican recipe is fantastic!

The arroz con pollo is one of my favorite dishes to order at our local Mexican restaurant, so I tried to replicate it on my Blackstone griddle, and it turned out delicious! I started by cooking my Mexican rice the day before and refrigerating it overnight... for how to make the rice, be sure to check out our video for the Grilled Stuffed Steak Burrito.

Then I did a quick and easy marinade for the chicken strips while I was cutting my vegetables. For my griddle arroz con pollo, I used diced mini sweet peppers, sliced onions, sliced tomatoes, and diced smoked jalapeno.

Start cooking the refrigerated pre-cooked rice first, just like you would for fried rice. Then add the vegetables to the griddle next because they take the longest to cook. Heat up your white cheese dip in a saucepan on the griddle, and cook the chicken strips until done.

This easy Mexican griddle recipe of chicken and rice is pretty quick to make, and it packs a punch of flavor. Enjoy!
