Thrust attacks are good.. It's one of the reasons I use Saw Spear. It just destroys everything.

You can combo Ebrietas to death off one head break, but only two of it's attacks really leave it's head open. Just wait at mid range for it to put it's head down and poke it a few times. You can get a few extra strong hits before and after a visceral. I even whiffed a big hit and still had time to finish it off.
