I finished the first half of my canning project, and all eight of my pint jars full of whole peeled tomatoes have a partial vacuum in them. I'm letting them cool on the counter overnight. For the first hour or so they will continue to "boil" even though they are at room temperature because as they cool the steam condenses, forming the partial vacuum in the jars. If the lids are properly sealed they can stay good to eat for up to 18 months after processing.
