Cauliflower Steak with Whipped Sweet Potatoes and Greens
When you’re in the mood for a delicious, hearty meal with lots of different flavors, this is it!
Serves 3 people
Ingredients for Cauliflower Steaks
• 1 large head of cauliflower
• Low-fat hummus
•
Ingredients for Whipped Sweet Potatoes
• 2 large sweet potatoes
• ¼ to a ½ cup of plant milk
• 1 tablespoon of maple syrup
Ingredients for Minty White Bean Sauce
• 1 can of white beans such as cannellini
• ¼ cup of cilantro leaves
• ¼ cup of fresh mint
• 2 slices of fresh jalapeno
• 1 small slice of red onion
• Juice of 2 limes
• 1 teaspoon of Ume plum vinegar paste (you can substitute rice wine vinegar you don’t have this or omit it completely)
• Dash of salt
Preparation
1. Preheat oven to 375 and line a baking sheet with parchment paper. 2. Slice the cauliflower in half and then into 1-inch thick “steaks.” Leave the core in the middle.
3. Spread a thin layer of low-fat hummus onto each steak.
4. Place the cauliflower on to the covered baking sheet and cook at 375 for about 25-35 minutes until cauliflower steaks are tender and a little brown on the top. 5. At the same time cook sweet potatoes in the oven for 45 minutes or until tender.
6. When the sweet potatoes are cooked, take the skin off and place them in a bowl. Add plant milk and maple syrup and blend with a hand blender like you would mashed potatoes.
7. Steam your favorite greens (I used bok choy and collards for this). You can top them with tamari, Bragg’s Liquid Aminos, or an oil-free teriyaki sauce if you like. 8. Assemble it all onto a plate.
9. Make the minty white bean sauce by putting all ingredients into a high-speed blender and blend until smooth. Adjust to taste adding more salt, lime or mint accordingly.
10.Put a little of the minty white bean sauce on top of the cauliflower steak. Use sparingly, this is supposed to just give it a hint of flavor.
11.Throw a few pomegranates on top, but not necessary.
12.Eat it all together, sweet potatoes, greens and cauliflower all in one bite!!
