Meat and Potato Hand Pies
Ingredients
olive oil
2TBS chopped garlic
1/2 small onion diced
1/2 carrot peeled and diced
1/2 celery diced
250g ground beef
1/4tsp salt and pepper
1/2tsp Italian seasoning
1/2TBS tomato paste
1TBS soy sauce
1.5TBS flour
150ml broth
1/2 potato peeled
1/2tsp thyme
1/2tsp rosemary
1/8c frozen peas
puff pastry
Notes In a large saucepan, heat up the olive oil. Add the garlic, onion, carrot and celery. Cook until soft. Cook the beef. Season with salt and pepper. Add seasonings, soy sauce, and tomato paste. Add flour and heat to thicken to a sauce. Add the broth and potatoes. Simmer for a few minutes. Add peas, thyme and rosemary. Simmer until the potatoes are tender and the sauce is cooked away. Cool to the side. Roll out and cut the puff pastry. Have 8 rectangles of pastry that are the same size. Place some meat in the middle of one. Brush the edges with egg wash. Roll out another pastry to be a little bigger. Place this on top of the other one. Seal with a fork to crimp the edges. Brush the top of the pastries. Bake for 20 minutes at 190C. Enjoy!
