Cows are one of the hardest animals to keep in the game, because you have a lot of stuff to look after.
If you get the large barn with feeding robot (that's what I got, cause lazy) all you need to do, is fill the respective slots with hay, straw (you get these with a loading wagon, and silage, to create TMR (total mixed ration). There's also mineral feed, but it's not mandatory. If you are old school, you need to mix these manually, in a shape of bales, to produce silage, or use a mixing vehicle.
From there ,you also need hay and grass for food, and also straw for bedding.
Don't forget ratios, that's also very important.
brown swiss and Holstein, are meant for gathering milk, which in turn will allow you to sell it as is, or process it into other produce, and then sell.
Angus and Limousine (obviously) are the ones meant for breeding, hence the higher price.
Apart from milk, they also produce slurry, which is a liquid fertilizer.
As of this video, it seems manure production is broken, but you just need to add a manure pit (under silos, in construction, and place it near the cow barn. It does not work with pasture.
