Sheep are one of the easiest animals (with chickens) to maintain.
All you need to do, after setting up a small, medium or large space for them, is buy a few sheep, and make sure they have either grass or hay to eat. Make sure you check their age, if they're too young you'll need to wait some time until they're ready to give you wool, which in term will allow you to produce fabric, which will allow you to produce clothes.

Also, I used a forage wagon to collect grass, but if you have extra grass / hay bales laying around, you can just place them on the feeding area (trailer symbol) and it'll automatically feed your sheep until it's gone.
