I had beaten Crash 3 with 105% before, but only about 2-3 of the Relics were Platinum. The rest were all Gold. It's definitely my favourite Crash Bandicoot, with the Wrath of Cortex a close second. There's less 'pure' platforming than Crash 2, which is what most people complain about, but I actually enjoy every single one of the non pure platforming stages, in some cases more than the actual platforming ones.
I'll go for all Non 'Running' Platinums as I play and I start each world with my favourite level, and end with my least favourite.
I'll give time references and general hints.

4:22 Orient Express - Crystal & Box Gem
The boxes aren't hard to get, just make sure you get the boxes above the spring boards. Another interesting thing to note is that you can hit the baskets dangling from the towers to get more Wumpa Fruit.
6:44 Orient Express - Platinum Relic
You'll need to run pretty much constantly and get all the boxes. Jumping whilst running seems to be faster than just running. If you're really pro, stick to the walls when there's no boxes and try to glitch run at the end.
8:23 Bone Yard - Crystal & Box Gem.
You'll have to come back here after obtaining the Red Gem to get the Clear Gem. Probably my favourite chase type levels in the Crash Bandicoot series. The Triceratops will break boxes, but for some reason not Checkpoints.
11:39 Toad Village - Crystal & Box Gem
Probably the closest to a standard level of Crash Bandicoot you'll get, not a bad thing though. I like the medieval theme, especially in the later levels with the Wizards and Giants.
14:16 Under Pressure - Crystal & Box Gem.
Shame there were only two of these levels. The mini sub is fun to play with using the Torpedo spam. Take note of the boxes hidden behind Red Seaweed, the Sub will need to destroy the Seaweed to get to the box, so Crash can't do it on his own.
17:18 Under Pressure - Platinum Relic.
Keep Spinning when not on a sub and dash as much as you can whilst on it. On the quarter turn with the two electric rotating plate, you should be able to get it by going straight down rather than all the way round like I did. This can cut more time off if you're shaky somewhere else.
19:38 Makin' Waves. Crystal & Box Gem.
I'm not a big fan of these levels, their open layout being the main culprit, it's hard to remember where every box is. Why are there so many of these level too?? Missing boxes on jumps can be annoying. The second of these was particularly frustrating, at least for attempting the Platinum Relic. after getting the 5th Crystal you have to face the boss.
22:17 Tiny Tiger - Super Belly Flop Obtained.
Really easy boss. But they all are to be honest. The funny thing is the crowd is more animated and detailed than some EA sports game I've seen in recent years. Not a lot to say about this boss.
Dodge the trident jumps and be aware of the lions after you've hit Tiny. Slide spinning makes a joke of this boss. Up to three lions can come out of one entrance, but if you're constantly jumping and spinning, it shouldn't be an issue. Just wait until the next boss, where I ignore what I'm supposed to do and destroy him regardless.
24:36 Makin' Waves - Platinum Relic.
Just hit every jump and get the boxes from them. I'm not sure if there's time to be saved by the Seagull. I don't even use the hard turn here, which is by holding down and pressing a direction. It can shave a few seconds off if you use it. Make sure you hit the bombs towards the end instead of going around them to save time too.
