It's quite simple to do. just pick Coco Park and select Easy difficulty and 7-Lap Race. then you overlap COMs as much as possible till before you reach the last lap.

Almost of people might already know this way but i wish if this way will help some people to achieve the part of Pro Challenges ^.^'

Try to use D-Pad, if you fail this way with analog stick.

If this way wouldn't work on you, try to run through the left or right side of the track for avoiding from attacks by NPCs' Power-Ups. because getting their attacks let your challenge cancel.
