Description of video & Ingredients:
In this video recipe Barry shows you how to make an incredibly delicious creamy cajun chicken penne paste dish with avocados and tomatoes. Such a speedy dish to throw together this recipe can be tweaked in so many ways and brought to the table in 20 minutes!
Here's the ingredients - give it a go!
2 skinless chicken breasts
400g fresh penne pasta
400ml low fat double cream
2tbsp ground cumin (for chicken)
1 avocado, in small cubes
1 tomato, in small cubes
Pinch lemon zest
Handful freshly chopped parsley
1 tbp ground cumin (for sauce)
1 tsp onion powder
salt & pepper
1tbsp grated parmesan
To serve:
Freshly parsley, squirt of lemon juice, sprinkling of parmesan
