New addition to Dark Souls 3 - Crow Quills - is a neat little thing. Despite it being notably shorter than Estoc, it still packs a solid punch due to higher AR and multi-hit combos. It has everything you may ever need, from the annoying 'throwing knife 2.0' L2 to ridiculously efficient DEX scaling.

Call it a 'baby Estoc' or 'jumping Dagger' - whatever suits your playstyle - as long as you apply Darkmoon Blade on top of it and infuse it with a Sharp gem - you can't go wrong!
