Just make sure you keep to attack it's toes like I do in this video. Sometimes it might jump etc, but this should be pretty easy, especially if you can survive a hit from the fire. I don't even wear any rings or anything for fire protection, nor do I have more than like 20 or so int, and my vit is around 40. With the rings for fire protection, maybe some armor, you can easily survive to screw up once or twice or something.

Also had a fun little "glitch" when entering the area, when I tried to 2-hand my sword when I remembered I had forgotten to do so before I tried entering. This was my second attempt at the boss in this playthrough.
