Getting good comes with many forms within this universe of Dark Souls. Parry away the hits you can't or don't want to evade and deliver a fierce blow. Sorting out viable options to block attacks and picking when to strike back. Casting magic to decimate opponents up close or further away with a few tricks up your sleeve. Pyromancy, an art of attuning to fire, and engulfing most enemies in flames, but some of options also exist for flexible purposes where simple flames in battle don't meet the needs such as poison gas, sweating heavily for protection against flames, coating your body in a temporary metallic protection, or even steady area healing. Ranged combat with bows and crossbows of variety and different ammo to work with for combating the circumstances. Short ranged dexterity where speed and momentum is your friend and your damage in rate will balance out as such. Lastly Faith, the ability to grant the miracles of healing, of protection, of finding your way, and casting lightning at your foes.
The only unacceptable answers in a fight are ones where an enemy is immune, or punishes you for, but the daring and looking for more of a challenge may try and succeed otherwise. I myself take little pleasure in most of obvious methods first presented besides Pyromancy to an extent, and prefer 2 handing bigger weapons that clobber foes as much as hacking them to pieces with a good spacing, but the drawback is how often I can swing and how fast. Just as important as the arts of combat in the field are weapon types in the field, or against certain of enemies. Some are more vulnerable to strike damage, some more to stabbing, some more to slashing. Some enemies can be simple parried, and some can be back stabbed. However quite a few enemies can stagger in response to being hit enough in this particular game as well as 3.
The world environment is designed to be explored and made to the most use of the player, where most areas can be accessed by the player, and most everything used against the player you don't like can be used against an enemy player, minus Curse and Toxic. It's true some important items can be obtained in a more limited fashion, but long term, the games will find ways to work around it in a balancing manner for their environment once where you should be. Sometimes this process can give a tiny bit of a struggle, but long term it should work out as you find and unlock shortcuts and merchants, find your grind spots to farm things, and go through questlines of NPCs.
