Welcome to Lord Fussington's Walkthrough of Demon's Souls, the "Leechmonger of Valley of Defilement 5-1."

The Leechmonger is arguably the weakest boss in the entire game so I haven't very much to say about him; he is weak to everything, particularly fire, but you can slash him to death without worrying too much about his attacks. As usual, magic makes the fight even easier - although, I do think melee is best in this case.

Melee:

I recommend a shield with a one-handed weapon or a very strong, two-handed weapon: the former consists of attacking, blocking, being knocked down, getting back up and attacking again; the latter consists of ceaseless attacking until the boss dies - you may have to roll or take a hit to the face. Both are viable with one being more risky than the other. Just be aware of your character's limitations.

Magic:

Again, a shield to block attacks if you're getting close, but you can just go the first level or so and throw spells at him; he'll die quickly - especially if they're fire spells.

Bow and arrows:

Fire arrows work best, but regular ones are fine as well. You can kill him from the entrance if you have an upgraded bow and do enough damage; if not, you can try killing him from the first level or so since the closer you are, the more damage you'll do.

The Leechmonger has several attacks: he aimlessly flails his leech-arms, he slashes at you with his leech-arms, he'll launch leeches at you which slow you down, and he'll heal himself. Generally, I just block his attacks which results in me being knocked down but hardly taking very much damage; I entirely ignore the leeches on me and I do enough damage to counter his heal.

A note on bow and arrows: it is the safest method, but the least damaging. Make sure your damage is high enough that his heal becomes negligible - that can mean upgrading your bow, using fire arrows or just getting closer to him. But I wouldn't worry about it too much; I used the method without preparation.

As a final note, you'll be fine; he's really, really easy.
