The Xbox 360 footage is from the game running on the Xbox Series X, and the visuals aren't different from original hardware, as far as I've inspected.
Lost Judgment's footage is taken from the Xbox Series X version of the game. I've inspected gameplay of the other console and PC versions, and it seems to be the same.
The Sega Model 2 arcade cabinet screenshot at the end is taken from a video by a user named MAME-FAN.
One thing's for sure, no matter the version, screw Metal Sonic.
