Does it Deep Fry: Whole Duck 🦆
Unlike other poultry like chicken or turkey, duck is covered in an extremely thick layer of fat. This is because ducks swim - the fat keeps them buoyant and also protects them from the cold water. As a result, the cooking process is quite different.
In my first attempt deep frying duck, I kept the oil temp at 375F. This is slightly hotter than I would normally fry chicken, and I was surprised by the lack of browning even after 30+ minutes of frying. It was as if the duck had so much fat that needed rendering, it refused to fully crispy up. Next time I’ll try with oil closer to 425F, but for now, sadly duck does not deep fry.
What should I deep fry next?
