Third mission gives you access to the workshop and traps. Traps are changed from the previous game so you can no longer cheese them but you also no longer need to keep a large workshop around to store all the traps in.
The Lord of the land will start his assault when you mine out all the gold, but your troops can trigger her early by capping tiles in front of his fort.
