Easy Instant Pot Lentils With Yellow Squash Recipe

All types of lentils, or dal (in Hindi) or pappu (in Telugu) are in regular rotation in our home for healthy meals and making them in the Instant Pot makes it super easy to whip up! Here's one we made with yellow squash to add more veggies and a flavor punch with some tamarind for a tangy and spicy finish.

Ingredients:
1 cup toor dal
1/2 cup chopped red onion
2 chopped yellow squash
3 diced roma tomatoes
1 tablespoon of ginger garlic paste
40 grams of raw tamarind
1.5 tablespoon of avocado oil
1 tsp cumin seeds
1 tsp mustard seeds
1 dried red chili pepper
1 sprig of curry leaves
1 tsp turmeric powder
1/2 tsp coriander powder
Kashmiri red chili powder (to taste per spice preference)
Salt to taste
Cilantro for garnish

1. Rinse and soak toor dal in 2 cups of water for at least an hour.
2. Place raw tamarind in a bowl. Pour a warm cup of water over the tamarind and allow the tamarind to soak into the water by setting it aside for now.
3. Click sauté mode on Instant Pot and add avocado oil to the inner pot until it heats up.
4. Add cumin and mustard seeds and they should start popping.
5. Add curry leaves and the dried red chili pepper.
6. Add onion and mix until translucent.
7. Add chopped squash.
8. Add turmeric and give it a good mix.
9. Add ginger garlic paste and salt and mix again.
10. Add tomatoes and mix while letting the tomatoes break down.
11. Add chili powder and coriander
12. Drain the toor dal and add to the pot and give it another good mix.
13. Remember that bowl of tamarind and water? Use your fingers and mash the tamarind into the water to help extract more juice from the tamarind. Then strain the tamarind water so only the water and pulp is added to the inner pot of the instant pot. You can discard the fibers, membranes and seeds of the tamarind leftover.
14. Mix well and water if needed to ensure the lentils are below the water level.
15. Cancel the Sauté mode on the Instant pot, secure lid to sealing and pressure cook manual for 8 minutes.
16. Once done, let the Instant Pot naturally release.
17. Open the lid, mix, garnish with cilantro.
18. Serve over rice and enjoy!
