Notably the off course ending clip starts at a lower speed so the time at the end of the video, if anything, is an under-estimate of time saved

In order to make this faster you need to land very close to the finish line and use a bounce to cross it(or potentially not even bounce with an amazing jump). landing early and wheelieing to the finish negates most or all of the timesave shown here.
