This is why I learned Pandora's Box. It ignores magic defense, so it's the best way to get around his massive defense stats. However there's no way around his massive HP, so this is going to take a while.

First of all, let's talk about the setup. Cloud and Red are equipped for maximum magic, and they ended up at 143 and 151, respectively. Not bad, but not quite enough to max out Pandora's Box, even with four Hero Drinks. Tifa is only here for support, so she's got a Fire Armlet and Ribbon.

You obviously need to enter the battle with one character in order to avoid Whirlsand and to make sure he takes out the tentacles ASAP. This is the luck reliant part of the battle. If he uses Ruby Ray or Ruby Flame, you're dead. Just hope Cloud and Red won't get hit by any of these attacks until you finish setting them up with Haste and four Hero Drinks. Ruby can be slowed and paralyzed, so you can keep him immobilized most of the time.

Once everyone is ready, the boring part of the battle begins. Have Tifa toss a Dazer at Ruby, Cloud give Red a Turbo Ether, Red cast Pandora's Box, Cloud Mime, Tifa give Red a Turbo Ether, Red cast Pandora's Box, Cloud Mime and Tifa toss a Dazer at Ruby again. This cycle ensures Ruby will never get another turn, so just repeat it another 30 times or so and the battle will be over. Piece of cake. It only takes about 50 minutes, so I was able to defeat him in under an hour.

I wanted to include the whole battle in the video, so I sped up everything after the first round of attacks. There's really no need to watch beyond that, as it's all the same for the rest of the battle. However, if you want to win an onion, you can watch the entire battle and count how many times Pandora's Box is used.

This is the regular version of FFVII and Hardcore is only the name of the challenge. Rules:
