So a guy called Sakitoshi on RomHacking told me that you can import midis into OpenMPT almost natively... BRUH
So he's been working on redoing the Doom 1 soundtrack this way.
Therefore today I gave it a crack myself with TNT's music. I still have to reduce the channels down to 6, and reorder the whole song since it seems to arrange funny within OpenMPT when importing. But damn this sounds way better!
So far I've only done the Title and the Intermission / MAP31 track this way.
As for the lag in the level I've made a couple improvements, but it's still bogging down a tonne on UV.
