Hollow Knight Mod: Radiant Watcher Knight with Sanic Mod (1.5x Speed)
90Fighting the sanic Watcher Knights. Many, many Sanic died in the making of this video because Watcher Knights don't need a mod to move like sanic.
My thanks to Zaliant and Graig for recommending this mod. 2x is probably doable with spells on attuned/ascended. Given the unpredictable bounces I used spells to kill them more easily, but a nail only kill is possible (albeit a bit harder).
If you're interested in trying the Sanic mod, it can be installed through the mod installer on the HK Discord modding channel in pinned messages.

However, you will also need to alter the Float Values section of the Sanic.GlobalSettings file to look like:

And even then my file didn't properly speed it up, as originally I had it set to 3.0 speed multiplier and beat Pure Vessel, but it was slower than this (3x speed would be waaay too fast). Best of luck!
