I was really stressed heading into this fight, especially with how tough Regalla was, but it turns out Erik's a big pushover once you have the right approach. By simply running back and forth between the two top areas with Grapple Points, you'll taunt him to constantly take to the air and use his projectile attacks against you. These are far weaker than his close-range attacks, though you still don't want to take too many hits and deal with the status effects.
From there it's just a matter of choosing a good way to do damage, but also you don't want to consume resources that could be valuable against Specter Prime. I chose to use Lightning Shredders for this reason. They'll consume my Sparkers and Machine Muscle. Sparkers I don't have any real need for against Specter Prime as it's strong to Shock anyway. Machine Muscle is much more important, but there are at least 30 Machine Muscle in chests after Erik and before Specter Prime, so I can easily stock back up before that fight.
0:52: Be wary when you lose track of Erik like this. It often means instead of coming straight up to you, he's tacked off and is sneaking up along the side route. This can be a dangerous situation, so I just run over to the other side of the room and take a reset to feel him out.
1:35 Here I throw a fully charged Shredder at Erik. This is useless as far as I can tell, because he's immune to Shock, and this last hit does pure Shock damage. Here's a neat trick for Shredder Gauntlets: If you catch the third toss and have the fully charged fourth hit ready to go, and switch to another piece of Shredder ammo, you'll reset the state of your first ammo without losing the ammo count. In other words if you switch Shredder ammo types every three throws, you'll have infinite ammo. This isn't always ideal since that fourth hit is often very worth it for the big damage or element it brings, but in situations like this it can be nice.
2:10 Here I lose track of Erik again and let him sneak up on me, as I said. Fortunately he doesn't capitalize in a big way and I manage to make it out with my life. He could have easily killed me with his spear here.
4:45 I think this dialog from Zo comes at the halfway mark of Erik's life, but I've only ever played on Ultra Hard so I can't be sure.
5:10 I drink a potion here. There are four Large Health Potions before Specter Prime (technically two of them are in a chest right before Erik, but I left that chest untouched on purpose), so I know I've got leeway here.
6:40 Here you'll see me use the "infinite ammo" trick to reset the state of my Lightning Shredder.
With the appetizer out of the way, now I have to head on to the game's real challenge.
