There are many games out there that put history and historicity at the main core of the game's identity, however different titles have different degrees of historical accuracy. From the Paradox titles of Victoria 3 and Crusader Kings 3, to other strategy games like Civilization Vi, to even titles like Kingdom Come Deliverance and Assassin's Creed, there are myriads of ways games decide to depict history in their gameplay and myriads more compromises done in order to achiever a fun game to play.
