Uh, I think NYX can stand still and dodge things, I give up. Sorry for wasting your time.

NYX can dodge by simply moving (not rolling) through *certain* moves, too.
ie. Puddles, LTart’s Mortal Chasers and Draconic Mines
Regarding multi-hitting moves: it depends...
Twins, if you dodge their dash where it overlaps, you'll lose a chunk of gauge.
Kai Yan's spin, it's not really multi-hitting, it actually only has like 3 hits which NYX will dodge EZ.
....
NYX is neat.
