Here are some of Dr Janke's favorite recipes;
Winter Healing Soup
Ingredients:
7 cups low sodium veggie broth
1 onion, diced
3 cloves garlic, minced
2 stalks of celery, diced
1 large carrot, diced
1 can of garbanzo beans, drained and rinsed
1 tsp basil
1 tsp thyme
1 tsp oregano
1 tsp black pepper
1 tsp coriander
1 TBS turmeric
1 TBS parsley
2 TBS lemon juice
1 can of coconut milk*
1 ½ cup of wild rice
*use alternative non-dairy milk like soymilk or oatmilk if you have heart disease
Instructions:
1. Sauté onions in a few tbs of veggie broth for 8 minutes (or until translucent)
2. Add garlic (and additional veggie broth if need be) and cook for 2 minutes
3. Add carrots and celery and cook for 5 minutes
4. Add garbanzo beans, spices, and 4 cups of veggie broth, simmer for 10
minutes
5. Add 2 more cups of veggie broth, rice, lemon and coconut milk. Cook until
rice is soft (about 30 minutes).
6. Enjoy hot!
Easy Chana Masala With Chickpeas & Yams
Ingredients
1 red onion diced
1 15 oz can chickpeas rinsed and drained
5 cloves garlic minced
2 tsp ginger minced
3 Tbl tomato paste
1 Tbl curry
1 tsp ground cumin
1 tsp coriander
2 tsp garam masala
1/8 tsp cayenne pepper
1 tsp paprika
1 tsp sea salt , optional
3/4 cup light canned coconut milk Trader Joe's brand
OR 1/2 tsp coconut extract mixed with 3/4 cup non-dairy milk, MALK brand
2 small yams or potatoes chopped
1 1/2 cup frozen peas
1 28 oz can diced tomatoes
Instructions
1. Saute onions, garlic and ginger in a small amount of water or stock on medium-low heat
about 5 minutes until they start to soften and the liquid is almost evaporated.
2. Add the spices and cook with the onion mixture for another minute.
3. Add the tomato paste and coconut milk. Stir to combine.
4. Add chickpeas, potatoes and frozen peas and the whole can of diced tomatoes including
the juice.
5. Cover and simmer until the potatoes are tender, about 25 minutes.
6. Serve topped with yogurt, bananas, chopped almonds or raisins and mango chutney.
