How To Make A Simple Cranberry Cake

1/4 cup milk
1 /4 cup heavy cream
1 tsp lemon juice
1/2 cup unsalted butter at room temperature
3/4 cup sugar
1/4 cup apple sauce
1 tsp vanilla extract
1/2 tsp almond extract
2 tsp baking powder
1 tsp salt
1/8 tsp cardamom
1/4 tsp cinnamon
2 cups all-purpose flour
1 and 1/4 cup whole cranberries frozen
1. Preheat oven to 350F and prep a 9x9in baking pan.
2. Mix milk, heavy cream, and lemon juice together and set aside.
3. Cream the butter and sugar together for about 5 minutes until light and fluffy in a stand mixer.
4. Add apple sauce, vanilla extract, and almond extract and combine.
5. Add baking powder, salt, cinnamon, cardamom and combine.
6. Blend in 1 cup of flour until it's almost incorporated.
7. Add the milk, heavy cream, and lemon juice solution.
8. Add the other 1 cup of flour until it's all incorporated.
9. Gently fold in 1 cup of the cranberries to the batter.
10. Spread the thick batter into your pan.
11. Top with the reserved 1/4 cup cranberries and gently push them into the surface of the cake.
12. Bake for about 40 minutes, or until a toothpick inserted in the center comes out clean.
13. Let cool and enjoy!
