12 OUNCES MUSHROOMS diced VERY small
1 medium yellow onion OR 3 shallots
5 cloves of garlic finely diced
3 ounces ham finely diced
dijon mustard
salt and pepper
2 nice beef filets

canola oil for searing
Puff Pastry
4 eggs
