ingredients :

1 cup sugar
32 oz. cream cheese (Philadelphia, don't get low fat or light!)
1 teaspoon vanilla extract
2 teaspoons lemon juice
1 cup sour cream
3 large eggs
2 - 6 inch Graham cracker crusts

tools to help :

hand mixer and bowl, or mixing bowl
spatula or spoon
2 pans (for water bath)

tips :
water bath helps prevent cracking!
prep early! room temp ingredients mix WAY better!
1 hour cook, 1 hour cool (in open stove, in water bath) - then leave overnight in fridge
