How To Make Raw Vegan Hakka Noodles with Raw Vegan Chef Yin

In this video, I show you how to make raw vegan Hakka Noodles.
INGREDIENTS
*For noodles
1 zucchini, spiralised
*For minced meat
1/2 cup mushrooms (a mix of button, king oyster and shiitake mushrooms)
2 tablespoons walnuts
1 clove garlic, minced
1 tablespoon chopped coriander leaves
1 shallot, sliced
2 teaspoons soy sauce/coconut aminos/tamari
2 teaspoons coconut nectar or liquid sweetener of choice
1 teaspoon miso paste
1/2 teaspoon Chinese rice wine
1/4 teaspoon ground white pepper
*For garnish
1/2 cup bean sprouts
2 spring onions, sliced at a diagonal
Edible flowers, optional
METHOD
*For minced meat
Place all ingredients in a food processor and pulse till mixture is chunky and resembles mince meat.
*To assemble
Place zucchini noodles into a bowl.
Place minced meat on top of noodles.
Garnish with bean sprouts, spring onions and edible flowers.
NOTE: If you can’t find Chinese rice wine, substitute with balsamic vinegar.
