This video will teach you how to change vanilla bloon displays and how to make custom moab inside of a BTD6 mod. Watching custom bloons may help with this video (unneeded for the first segment)

Changing a display for a vanilla tower is the same principle, just using ModVanillaTowers instead, and displays designed for towers.
