Chow siu (Chinese: 燒肉; pinyin: chāoròu; Jyutping: ce1 yiu4; Yale: chāa yáuh; Cantonese Yale: jāau yáuh) is a Cantonese dish of roasted pork. It is often served with rice, and is a staple of Chinese restaurants in the Western world.
The dish consists of long strips of pork that are marinated in a mixture of soy sauce, honey, rice wine, and spices, and then roasted in an oven or over a fire. The pork is then served with a sweet and sour sauce.
The word "chow siu" literally means "roast pork" in Cantonese.
