There are three Enoki encounters in Shenmue - all of which appear on Disc 1 / before you visit the Harbour, all missable, and unlock in sequence (meaning you need to see the first scene to see the second, and the second for the third).

Enoki fight 1
Timing: Before you visit Heartbeats bar
Approach Tomato Convenience Store from the west. If it doesn’t spawn, try walking instead of running, and during the day.

Enoki fight 2
Timing: After Heartbeats, before Tattoo Parlour
Go to Sakuragaoka Park (possible other requirements - before 7pm, on a clear day). Enoki interaction 1 required.

Enoki fight 3
Timing: After Tattoo Parlour, before Harbour.
Head to Wakaba Apartments in Dobuita after 7pm on a clear evening. Enoki interaction 1+2 required.
