Impro at Cooking with Dopefish #13 - Cinnamon Buns
The first Baking episode of Impro at Cooking with Dopefish! We make Swedish Style Cinnamon Buns!

This amount of ingredients make as many buns as you see in the video, roughly 25-35 depending on size. Your measurements don't need to be particularly exact.
Dough Ingredients:
25 g Yeast (Half a package)
2.5 dl Milk (~1 US cup)
100 g Butter
0.8 dl Sugar (~0.33 US cups)
15 ml Salt (A generous pinch, or 3 US tsp)
30 ml Cardamom (6 US tsp)
30 ml Vanilla sugar (6 US tsp)
8+ dl Wheat flour (3.3 US cups) [Stir in more as needed, also used for rolling the dough out.]
0.5 dl Kesella/Creme Fraiche (0.2 US cups)
Filling:
100 g Butter
60 ml Honey (4 US tbs)
Cinnamon, lots
0.5 dl Sugar (~0.2 US cups)
0.2 dl Kesella/Creme Fraiche (~0.1 US cups)
Cardamom, a pinch
Brushing:
1 whole egg, beaten
Topping:
Pearl sugar
Method:
Heat the milk until it's warm, add the yeast, mix until dissolved. Add the remaining ingredients minus the flour. In a large bowl, mix the milk-liquid and flour together little by little. Once combined, let the dough rest and rise for an hour, it should roughly double in size.
Preheat the oven to 225 C (437 F). Mix the filling together. Roll the dough out (or if using the lazy method, make some fillable shape with it) and spread the filling. Cut into strips, roll up and place on muffin cups or similar in the oven. Beat an egg and brush the buns ,then sprinkle them with pearl sugar before placing them in the middle of the oven for 5-10 minutes or until golden-brown and the center is no longer sticky/doughy.
