If you want to zoom out more you can do this by changing the FOV parameter in the 'engine.ini' file.
Default:
float DefaultFOV = 60.000000
I changed to:
float DefaultFOV = 110.000000

Also, seems there is a minor glitch where the new FOV setting doesn't take effect every time from New Game starts. Seems to work fine from loading saved games however.

To enable custom resolution, you need to edit the settings.ini file.
Set your resolution there, save it and make it read only.
