In this video, Mahalo's Chef Eric Crowley shows you how to cut a lozenge from a carrot.

What You'll Need
---------------------------------------------------------------------

Sharpened knife* Cutting board
Carrots, peeled

1. Cut off the stem and point of the carrot. Then slice the carrot into a two-inch piece.
2. Cut off a small strip from the side to stabilize the carrot so it doesn't roll when you are trying to cut it.
3. Grip the knife with your middle, ring and pinky finger around the handle and your thumb and pointer finger around the hilt of the blade.
4. Hold the carrot with your fingers curled under so that you don't accidentally cut yourself.
5. Cut off one of the rounded sides of the carrot then slice a rectangular piece from that same side.
6. Trim your rectangle so that it doesn't have any rounded sides. Continue to cut these types of pieces from the rest of your carrot.
7. Stack your slices on top of each other and align them so they are perpendicular to your knife.
8. Hold your knife at an angle to your strips as you cut off the corner piece.
9. With your knife at the same diagonal angle, continue to make cuts along your carrot about 1/2 inch apart.
10. Your finished pieces will be diamond shaped.
