After a few days rest to let the series catch up, I also did some research in regards to doubling the amount of Farmers and Herdsmen without doubling the amount of Farms, Orchards and Pastures and it turns out I was mistaken that it does NOT benefit your town whatsoever.
So I undo all farms, Pastures and Orchards, Mines and Quarries of all doubled up Laborers.
However, to compensate, I remove a few useless Storage Stockpiles and Barns to make room for more Crop Fields, which I will continue to do so in the next (few) episode(s).
