Here is my Challenge Mode run of the Ame-no-Murakumo fight from last year. This Challenge Run was a standard Hard Mode run (on a completely new save) where I also wasn't allowed to use Subclasses. So how is the Murakumo fight without Sub-Classes? It's pretty miserable.

I'll admit I didn't know a lot of the strategies when I did this fight last year (for example, I didn't know that you could greatly minimize Murakumo's damage with Reimu, Eiki and plenty of SPI Affinity Library Upgrades), so most of this fight was just "regenerating Mokou and Komachi tanking Murakumo with 0 MP while Aya tries to sneak in extra turns and attackers". But I think even knowing you can reduce Murakumo's damage wouldn't help; trying to actually hurt Murakumo without Sub-Classes is just way too annoying IMO. Flandre and Kasen are fairly risky, Kogasa and Parsee require TRR etc. only Yuyuko can do any damage with little setup (using her DRK Row Attack). Even then there's always a chance of Murakumo self-healing when it uses it's MP Steal attack. I wouldn't recommend just for the length alone (this near 15 minute video of me hit and running Murakumo was the "fastest" attempt. Yes, you read that right. This was the "fast" version of this fight)

Since this is Labyrinth of Touhou 2, I'm almost certain someone out there has figured out a way to break this without Subclassing (the Parsee setup is still technically possible). Personally? I have no interest in doing this again. Just use the Subclasses, they're there for a reason. Playing without Subclassing certainly won't help in the Post Game.
