Against the Bird he specifically summons gas that covers 1-3 sections of the map. The order is always the same, Water/Wood/Fire. Either stand in a section where there’s no gas or stand in the one matching your currently equipped weapon. For my Frass weapon I’m going to be standing on the right.

Other notes are that as long as you’re regularly dealing damage the fights are virtually all scripted and will do the same attacks at the same time every time. If you fail to keep up the damage then the bosses will add filler attacks until you meet the damage check and then continue with their scripted patterns.
