Layman's Abstract: Moringa oleifera, a tree native to Asia and found in many parts of Africa, is known for its health benefits and rich nutritional value. This study looked at how the composition of the leaves and the size of the powder particles affect its useful properties. The researchers tested leaf powders from young and mature Moringa leaves, measuring things like protein, carbohydrates, lipids, fiber, and the size of the powder particles. They also examined how the powder absorbs water and oil, its solubility, and its bulk density. The results showed that the amount of fiber in the leaves plays an important role in how the powder behaves, especially in how it absorbs water and oil. While the particle size of the powder is also important, it doesn't always affect the powder's properties in a predictable way. To make the most of Moringa leaf powders, it’s important to consider the fiber content and the size of the particles.
