BUTTERMILK PANCAKE BASE
(Makes 4 servings / 4 large pancakes)
Ingredients:
1 Cup (120g) All-Purpose Flour
2 Tbsp Sugar
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp fine Salt
1 Cup (240 mL) Buttermilk
-OR-
Makeshift Buttermilk (3/4 Cup [180 mL] milk, 2 Tbsp vinegar, 2 Tbsp melted butter)
1 large Egg

FILLINGS/TOPPINGS/FLAVORINGS
1 Cup of filling/topping of choice (I used 1/2 cup banana sliced thin and 1/2 cup 60% cacao chocolate chips)
Spices of choice (I used 1/4 tsp cinnamon and 1/2 tsp pure vanilla extract)

Directions:
Mix together dry ingredients and wet ingredients separately and then combine. Whisk until smooth and bubbly. Add spices, fillings, flavorings, fixins. Preheat a nonstick pan or skillet to 350F (175C) this will be medium-low for gas stoves and medium for electric typically. Drop in a pat of butter on the skillet and slather around IF you like caramelization on your pancakes, if you don't then raw-dog for fluffy goodness. Fill a ladle with batter and pour onto cooking surface. Allow to sit until you see bubbles on the top all over, the center is most important and will cook last! You should see the pancake look cooked through the bottom half when you view it from the side as well. Flip over and lightly press down to evenly disperse batter. Be careful not to squish too hard cuz you want them aerated! Cook until golden brown and cooked through, about 3 minutes per side. SERVE AND WATCH PEOPLE CONFESS THEIR LOVE FOR YOU
