Yummy custard cream sandwich cookies made with gummy bears. They taste a lot like the Peak Freans Fruit Creme cookies.

**NOTE** don't put the gummy bears in the center of unbaked cookies and then bake them. The gummy bears will melt, bubble up and leak all over the top of the cookies. Been there, done that.

1 cup butter room temperature
1 cup granulated sugar
2 eggs
4 cups all purpose flour
3/4 cup cornstarch (I say 1/4 cup in the video, but it is 3/4 cup)
3/4 tsp salt (omit if using salted butter)
1 tsp vanilla extract
1 tsp vanilla bean paste or ground vanilla (omit or use 2 tsp of the extract)
About 1.5 cups of gummy bears
2-3 tbsp coarse white sugar.

Cream butter and sugar together, beat in eggs, vanillas and salt.
Beat in cornstarch and then stir in flour until combined.
Roll out to 1/4" thickness, cut out base shapes and top shapes, make sure you have the same number of both.
Bake at 350F for about 10-12 minutes until light brown on the edges/bottom.
Cut up the gummy bears into small pieces with scissors or knife.
When you take out the cookies with the holes in them out of the oven, immediately place the gummy bear pieces in the holes.
They should melt from the heat of the cookies and the cookie sheet. If they don't put them in the oven at 350 for 1-3 minutes until they melt. Keep an eye on them, the melted gummies will foam up quickly and make a mess of your cookies.

Allow to cool slightly and then before the gummies are completely solid, sprinkle with coarse white sugar.

Allow all cookies to cool.

Cookies filling:
2 2/3 cups of powdered sugar
3/4 cup softened butter
1 heaped tablespoon of custard powder
2 tsp vanilla extract
1-2 tbsp milk or cream

Combine the sugar, butter,, custard powder and vanilla in a bowl.
Add enough milk a little bit (1tsp) at a time until it is creamy enough to spread on a cookie.

Place a small amount of the filling on the bottom of one of the whole cookies (no hole) and then top with a gummy filled cookies. Press gently together. Store at room temp. in a covered container.
