The Seventh Gym Leader in Pokémon Sword and Shield is against the Dark type gym leader Piers. The Dark type has 3 weaknesses: Bug, Fighting, and Fairy. Typically Dark types have high Attack and Speed, but there are exceptions, such as Obstagoon, who has much higher Defense than I realized, as I took an unexpected Counter-attack resulting in the first KO to a gym leader in this run.
