Turns out, in the Tech Demo, switching back from free-roam-camera mode to gameplay, resets the camera and can alter sonic's direction. A minor specific i only just noticed putting this comparison together.
If you listen carefully i think you can hear the e3 2005 teaser music in the Tech Demo clips, and if I'm not mistaken, the heroes spring sound effect.
I also noticed the camera moves more freely when going fast mainly when interacting with obstacles.
2:26 in the tokyo access clip you can just see the top of someones hair, which you can see fully in the gamespot clip. (the beauty of more than one perspective of the same event. XD)
