Both of these are abilities that use FP and can be acquired in a variety of ways, primarily when you meet a vendor that can sell them to you by a fixed amount of runes, by finding them after defeating certain enemies or learning by handing scrolls or prayer books to the vendor at the Church of Sorrows.
No matter the way you learn them if you want to use them you need to take into consideration your stats.
Offensive and Support Sorceries usually require high stats of Intellect, starting around the 13 up to 40ish points.
Offensive and support Incantations on the other hand are based on your Faith and Arc stats, using either of them or both in order to cast them.
In order to equip any of these once you have the necessary stats, you just need to go to any site of grace, go down to the "Memorize Spells" option, select any of them and place them on any of your available Memory Slots. You will gain more memory slots by finding Memory Stones, available by exploring or defeating certain bosses as you progress through the story.
The final step for using spells and incantations is to equip the correct weapon as your right armament. For Sorceries you need to equip a Glintstone Staff, the first one you can get, in case you're not an astrologer or any of those magical classes, is with the Nomadic Merchant by the Liurnia Lake Shore Site of Grace.
For the Incantations, you will need a Sacred Seal. To get one, progress through the story until you get access to the Roundtable and buy it from the Twin Maiden Husks vendor.
With the armament equipped, now just cycle through your incantations or sorceries with the D-pad on your controller or whatever key bind you have for this on PC and do a regular attack to cast your spell or incantation.
And that's it! You're now ready to use magic on your journey across the Lands Between.
