Most important tip is DODGE/QUICKSTEP FORWARD after you hear the parry "noise." The actual riposte window is pretty long and even though it may look like you're right in front of the mob, you may still be that inch too far away for the animation to trigger . As you can see in the video I even did the parry late enough to trade hits with the wolf and still had enough time to dodge forward and successfully riposte. Usually a failed riposte is mainly due to you not being nose to nose with the mob vs the actual timing of the button press.
