Closing (quitting) apps in iOS 7 is done easily by double-tapping the home button to summon the multitasking screen, and then swiping up on an apps preview to close it. The app will fly off the top of the screen indicating it has been quit.

Using multitouch you can quit multiple apps at a time using this trick too, by swiping up on all three visible panels.
